Oklahoma Fried Onion Burgers

This is a recipe from “Cook’s Country” on PBS. I’ve been wanting to try it for a while and finally found the recipe at this website. They are really easy to do and the onion/beefy flavor really comes through. I served these on brioche buns. On having them again, I truly wonder if these are any better than a hamburger cooked like always and topped with caramelized onions. I'd like to try a side by side sometime. I suspect that getting the onions done enough overcooked the burgers.

1 large onion, halved and sliced 1/8 inch thick
salt and pepper
12 oz. 85 percent lean ground beef , seasoned with S & P
1 T unsalted butter
1 tsp vegetable oil
4 slices of American cheese
4 hamburger buns, buttered and toasted
Recipe
Toss together the onion slices and 1 t. in a bowl. Place in a colander and let drain for a half hour. Toss them occasionally. Place the drained onion slices in a dish towel and squeeze out all the excess liquid. Sprinkle with 1/2 t. pepper.
On a baking sheet, place the onion slices into 4 separate mounds. Divide the beef into 4 lightly packed balls and press onto the onion slices. Flatten to 4 inches diameter.
Over medium heat in a 12-inch skillet, melt the butter with the oil. Using a very thin spatula place the patties in the skillet, onion side down. Cook until the onion is browned and crisp around the edges – about 6-8 minutes. Turn the burgers, raise the heat to medium-high and cook until done – about 2-3 minutes. Remove the burgers to a place and toast the buns in the skillet. Place the cheese on the bottom bun and top with a burger. Add whatever toppings you like and serve.
