    Alan's Pear Cake w/ Glaze

    A delicious and moist cake that John served at a dinner party recently. This cake is dark and rich and so fragrant.

    List of Ingredients




    CAKE:
    1 1/2 c. oil
    2 c. sugar
    3 eggs
    1 c. sifted flour
    1 t. salt
    1 t. baking soda
    1 t. cinnamon
    1 t. vanilla
    1 c. (1 large can) pears in syrup, drained and chopped (save syrup)
    1 c. walnuts or pecans, chopped

    GLAZE:
    1 T. butter, softened
    1 1/2 c. 10X sugar
    2 - 3 T. reserved pear syrup

    Recipe



    CAKE:
    Preheat the oven to 350 degrees.

    Mix and cream well the oil, sugar and eggs. In a separate bowl, sift the flour, salt, soda and cinnamon. Add dry ingredients to the creamed mixture. Add vanilla. Fold in pears and nuts. Pour mixture into a greased and floured Bundt pan. Bake for 1 hour and 20 minutes. Cool 20 minutes and then turn out onto a rack to cool completely.

    GLAZE:
    Whisk all ingredients and drizzle on the cake.
