Alana's Yellow Cake

This was Amanda's favorite cake at the cake tasting that I recently did at work. I wasn't crazy about the bready texture, but it made a beautiful, high cake. I only had 8" cake pans, so this made a 3 layer cake. So that I wouldn't have to wash a bowl in between, I whipped the egg whites first and just set them aside while I did the rest of the recipe in the mixer bowl.
List of Ingredients
2/3 c. vegetable oil
8 egg yolks
1 C. water
1 T. vanilla extract
14 oz. cake flour
5 oz. sugar
4 t. baking powder
1 t. salt
8 egg whites
9 oz. sugar
Recipe
Preheat the oven to 375 degrees. Grease 2 10" cake pans and line with parchment paper.
Whisk the oil, yolks, water and vanilla just until combined.
Sift together the flour, 5 oz. sugar, baking powder and salt. Mix with the wet ingredients.
Whip the egg whites to almost the soft peak stage. Sprinkle in the 9 oz. sugar while continuing to whip until they reach stiff peaks - it should take about 2 minutes to do this part. Fold into the batter.
Bake for 30-35 minutes, until the cake passes the toothpick test.
Invert and cool on a rack. When completely cool, remove from pans.
