Bacardi Rum Cake

Recipe Introduction
This is a cake that you don't see around much anymore, but you should. It is moist and easy to make and very, very tasty. My husband's favorite.
List of Ingredients
- CAKE:
- 1 c. chopped pecans or walnuts
- 18 1/2 oz. pkg. yellow cake mix
- 3 eggs
- 1/2 c. cold water
- 1/3 c. oil
- 1/2 c. Bacardi dark rum
- GLAZE:
- 1/4 lb. butter
- 1/4 c. water
- 1 c. sugar
- 1/2 c. rum
Instructions
- Preheat oven to 325 degrees. Grease and flour a bundt pan. Sprinkle nuts over the bottom of the pan.
- Mix all cake ingredients together. Pour over nuts. Bake one hour. Cool 10 minutes. While still warm, poke holes in cake and spoon and brush glaze over top and sides of cake. Use all of the glaze.
- GLAZE: Melt butter in a saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat and stir in rum.
Final Comments
This is nice with a nice big dollop of softly whipped cream on each slice.
