Best Chiffon Chocolate Cake

Recipe Introduction
This is, to my taste, the best chocolate cake I have ever tasted. It has the chocolate intensity of a brownie with the tenderness of chiffon cake. Use your favorite frosting - I confess in the 20+ years that I have been making this cake, I have yet to find the frosting that is really good enough for it; i.e. as perfect a frosting as this is a cake!
List of Ingredients
- 6 oz. semi sweet chocolate
- 2 1/2 c. sifted cake flour
- 2 t. baking soda
- 1 t. kosher salt
- 2 sticks sweet butter - softened
- 2 c. sugar
- 4 eggs - room temperature
- 2 t. vanilla
- 1 1/2 c. sour cream
Instructions
- Preheat the oven to 350 degrees. Line the bottoms of 3 cake pans with parchment - do not grease.
- Melt chocolate with 3/4 c. water. Set aside.
- In a bowl, sift together flour, soda and salt.
- In a large bowl, cream butter. Add sugar gradually. Beat until fluffy. Add eggs, one at a time, beating well after each. Add chocolate and vanilla. Stir in flour mix and sour cream alternating. Start and finish with flour. Stir until smooth.
- Pour into pans. Rap on the counter twice.
- Bake 30 - 45 minutes. Cool in pans 8 minutes. Invert on racks and cool completely.
