    I made this for a birthday at Mike’s office and they went wild over it. I thought it was fine, but not really worth saving. Since they liked it so much, I thought I’d better – just in case someone requested it! I added some coconut extract to the frosting.

    List of Ingredients




    1 box Betty Crocker Super Moist lemon cake mix
    1 box (4-serving size) lemon gelatin mix
    2/3 c. water
    1/3 c. vegetable oil
    4 eggs
    2 containers Betty Crocker Whipped fluffy white frosting
    1 1/2 c. flaked coconut

    Recipe



    Heat oven to 350 degrees. Spray three 8-inch round cake pans with cooking spray and line bottoms with parchment paper rounds.

    Mix cake mix, gelatin powder, water, oil and eggs in the bowl of an electric mixer on low for 30 seconds. Increase speed to medium and beat for 2 minutes, scraping down the sides as needed. Pour evenly into the pans.

    Bake 24-31 minutes – until the layers pass the toothpick test. Cool in pans for 10 minutes. Remove layers from pans and cool completely on wire racks.

    Fill and frost the layers and sprinkle with coconut. Store loosely covered.
