My own, with some internet advice


Recipe Introduction


I was looking for a way to make an easy loaf cake with the flavor of white chocolate and cranberries. This was the result. Very moist cake. You could frost or glaze this, if you wanted, but it is fine without. These freeze very well.


List of Ingredients




Box of yellow cake mix
1 c. buttermilk
3 T. lemon juice
2 t. grated lemon zest
3 eggs
1/3 c. vegetable oil
2 c. fresh cranberries, chopped slightly and tossed with a little flour


Recipe



Heat oven to 350F. Spray two 8x4-inch loaf pans with cooking spray and line with parchment paper.

Mix all ingredients and portion into prepared pans. Bake for about 35 minutes. Test for doneness (toothpick or test temperature – it should be 200F). Cool on wire rack and remove from pan.
