This cake looks a little...um, odd with the frosting. But it tastes so good!
List of Ingredients
CAKE:
1 c. butter - softened
2 c. sugar
1 t. vanilla
3 1/4 c. flour
3 1/2 t. baking powder
3/4 t. salt
1 c. milk
8 egg whites
FROSTING:
12 egg yolks
1 3/4 c. sugar
1/2 t. salt
3/4 c. butter
1/2 c. lemon juice
3/4 c. candied cherries - quartered (I often use maraschino cherries instead)
1 1/2 c. chopped pecans
1 1/2 c. chopped raisins
1 1/2 c. coconut
1 can of cream cheese frosting
Recipe
CAKE: Cream butter. Gradually add sugar, beating well at medium speed. Add vanilla; mix well.
Combine flour, baking powder and salt. Add to creamed mixture alternating with milk, beginning and ending with flour. Mix well after each addition.
Beat egg whites to stiff peaks. Fold into batter.
Grease 3 nine inch round pans and line bottoms with parchment paper. Bake at 350 degrees for 18 - 20 minutes. Cool in pans 10 minutes. Put on racks and cool completely. Frost.
FROSTING: Combine first 4 ingredients in the top of a double boiler, beat at low speed for 30 seconds. Bring water to a boil. Reduce heat to low and cook, stirring constantly until slightly thickened (about 20 minutes). Remove from heat, add lemon juice and beat at low speed one minute. Combine remaining ingredients except for can of frosting. Pour egg mixture over fruit/nut mixture. Mix well. Cool completely. Frost the top of each layer. Mix remaining frosting with the can of frosting and frost the sides of the cake.
