Chocolate Mousse Pie

List of Ingredients
- CRUST:
- 3 c. chocolate wafer crumbs
- 1/2 c. sweet butter - melted
- FILLING:
- 1 lb. semi-sweet chocolate
- 2 eggs
- 4 egg yolks
- 4 c. whipping cream
- 6 T. confectioner's sugar
- 4 egg whites - room temperature
- GARNISH:
- Shaved chocolate rolls
Instructions
- CRUST: Combine ingredients and press into 10" springform pan. Chill.
- FILLING: Melt chocolate. Cool to lukewarm and add whole eggs; mix well. Add yolks; mix well.
- Whip 2 c. cream and confectioner's sugar until soft peaks form. Beat egg whites until stiff. Fold both into chocolate mix. Pour into crust and chill overnight.
- Whip remaining 2 c. cream with enough sugar to taste until soft peaks form. Pipe rosettes of this onto pie and decorate with chocolate shavings.
