    Chocolate Mousse Pie

    long ago issue of Bon Appetit, I think

    List of Ingredients


    • CRUST:
    • 3 c. chocolate wafer crumbs
    • 1/2 c. sweet butter - melted
    • FILLING:
    • 1 lb. semi-sweet chocolate
    • 2 eggs
    • 4 egg yolks
    • 4 c. whipping cream
    • 6 T. confectioner's sugar
    • 4 egg whites - room temperature
    • GARNISH:
    • Shaved chocolate rolls


    Instructions


    1. CRUST: Combine ingredients and press into 10" springform pan. Chill.

    2. FILLING: Melt chocolate. Cool to lukewarm and add whole eggs; mix well. Add yolks; mix well.

    3. Whip 2 c. cream and confectioner's sugar until soft peaks form. Beat egg whites until stiff. Fold both into chocolate mix. Pour into crust and chill overnight.

    4. Whip remaining 2 c. cream with enough sugar to taste until soft peaks form. Pipe rosettes of this onto pie and decorate with chocolate shavings.
