    List of Ingredients


    • 1 c. butter - softened
    • 1/2 c. crisco
    • 3 c. sugar
    • 5 large eggs
    • 3 c. flour
    • 1/2 t. baking powder
    • 1 c. milk
    • 2 T. rum
    • 1 T. grated lime zest
    • 2 T. lime juice
    • 1 1/2 t. vanilla
    • 1/2 t. lemon juice
    • GLAZE:
    • 1/4 c. sugar
    • 1/4 c. butter
    • 2 T. lime juice
    • 3 T. rum


    Instructions


    1. Beat butter and shortening on medium for 2 minutes. Gradually add sugar. Beat for 5 minutes. Add eggs one at a time, beating just until yellow diappears.
    2. Mix flour and baking powder. Add to butter mixture alternating with milk, beginning and ending with flour. Mix at low until just blended after each addition. Stir in rum and next four ingredients. Put into greased and floured 10" tube or bundt pan. Bake at 325 degrees for 1 1/2 hours. Cool in pan 10 minutes. Remove from pan, poke holes in cake and pour glaze over.
    3. GLAZE: Combine sugar, butter and lime juice in saucepan. Bring to a boil. Boil and stir one minute. Remove from heat and stir in rum.


    Final Comments


    This is a really good cake. I have had the best success with using a light rum.
