Italian Cream Cheese Cake

Recipe Introduction
I made this to order for the Ringer family Christmas 2006. It was apparently enjoyed by all very, very much.
List of Ingredients
CAKE:
1 stick margarine (I used butter)
1 c. buttermilk
1/2 c. Crisco
1 t. vanilla
2 c. sugar
1 sm. Can flaked coconut (I couldn’t find this – I used a small bag)
5 egg yolks
1 c. chopped pecans
2 c. cake flour
5 egg whites, stiffly beaten
1 t. baking soda
FROSTING:
12 oz. cream cheese
1 t. vanilla
3/4 stick butter
1 c. chopped pecans
1 1/2 boxes 10X (1 1/2 lbs.)
Recipe
CAKE:
Preheat oven to 350 degrees. Spray 3 9-10” layer pans with flour/oil spray and line with parchment paper.
Cream margarine and Crisco. Add sugar and beat until mixture is smooth. Add egg yolks and beat well. Combine sifted flour and soda; add to creamed mixture alternately with buttermilk. Stir in vanilla, coconut and nuts. Fold in beaten egg whites. Pour into layer pans. Bake for 25 minutes.
FROSTING:
Beat cream cheese and butter until smooth. Add sugar and mix well. Add vanilla and beat until smooth. Add pecans, mix well and spread on cake.
NOTE: I decorated the cake top with pecan halves.
