Maraschino Cherry Cake

Recipe Introduction
This is just a cake mix fix up, but it turned out to be very popular. A co-worker requested a cherry cake for her birthday and she didn't mean a Clafoutis. I found a few recipes online to help me with the proportions. I was afraid that the cherries would be overwhelming and too sweet, but they were actually very light. I did this in a 13x9-inch pan and used only one can of frosting; if you do a layer cake, I'd use 2 cans of frosting. This would be good with a filling of cherry jam instead of frosting.
List of Ingredients
1 box white cake mix
3/4 c. finely chopped maraschino cherries
Canned cream cheese frosting
1 - 3 T. maraschino cherry juice
Recipe
Preheat oven to 350 degrees.
Spray 13x9-inch pan with cooking spray or spray two 9-inch layer pans and line bottoms with parchment paper. Prepare the cake mix according to the directions on the back, except use two whole eggs instead of 3 egg whites. Mix in the chopped cherries. Pour into prepared pans and bake according to package directions.
When cake is completely cool, mix the cherry juice into the frosting, to taste. Frost cake and refrigerate if not serving immediately. Let stand at room temperature 30 minutes before serving.
