Pink Lemonade Cupcakes

Recipe Introduction
A really good cupcake – and very pretty, too! I frosted them with pink tinted buttercream and topped them with candied lemon peel. Jessica suggested that I chop up some more of the lemon peel and mix it into the frosting.
List of Ingredients
1 c. flour
1/2 t. baking powder
1/4 t. baking soda
Pinch of salt
1/2 c. sugar
1/4 c. vegetable oil
2 egg whites
1/3 c. pink lemonade concentrate
1/4 c. milk
Recipe
Preheat oven to 350 degrees. Line cupcake tin with paper cups. In a bowl, combine the first 4 ingredients. In a mixer combine and mix the sugar, vegetable oil, egg white and lemonade concentrate. Alternately add the flour and milk to the mixture. Add a tiny bit of red coloring to make pink. Divide into cupcake tin and bake for 20-25 minutes. Let cool completely before frosting.
Makes 12 cupcakes.
