Ten-Minute Lime Cracker Pie

Shelby at eGullet made this one hot, hot summer day. It looked and sounded gorgeous, so I went off to look at the recipe. Which sounded seriously crazy. But is was so very good. Light and cool and refreshing. I confess that I had a bottle of Key lime juice that I wanted to use up, so I used that rather than fresh squeezed lime juice. I was surprised at how nicely this firms up - almost like cheesecake. This was very popular at my office - and not ONE person guessed that the flakey layers were Ritz crackers. I think that this would work with a lot of different flavors - orange, strawberry - maybe even try to incorporate peanut butter.
List of Ingredients
2 (14-ounce) cans sweetened condensed milk
1 pint heavy cream
1/2 cup lime juice plus 1 tablespoon zest from 8 limes
10 ounces (about 2 1/2 sleeves) Ritz crackers
Recipe
Whisk sweetened condensed milk, heavy cream and lime juice until thickened, about one minute. In a deep-dish pie plate, spread 1 cup of this filling. Top with a layer of the crackers. Repeat layers until full, finishing with a layer of filling. Sprinkle with the zest. Wrap loosely in plastic wrap. Refrigerate at least 2 hours (overnight is better).
