This recipe is just utterly cheating. But since we aren’t going to see Collette this year (my annual supplier), I just had to have some and wasn’t about to make my own mincemeat. Since pastry is not my forte, I decided to cheat on that, too. I think they are surprisingly good! Robertson’s is an English brand and it is the best jarred mincemeat I have ever tasted.
List of Ingredients
1 (29 oz.) jar Robertson’s Mincemeat
4 boxes rolled refrigerated pie crusts
2 eggs, beaten
Turbinado sugar
Recipe
Preheat oven to 375 degrees and line baking sheets with parchment paper.
Unroll the pie crusts, as instructed on package. With a large canning lid ring, cut 6 rounds from the pastry. Dab water around the edges and spoon a scant 2 t. of the mincemeat in the center of each round. Fold in half, press edges closed and seal with the tines of a fork. Place on baking sheet, brush with the egg wash, poke a few holes in each and sprinkle with the turbinado sugar.
Bake for 15 – 20 minutes, or until golden brown.
Makes 48 tarts.
