    Iced Almonds

    Recipe Introduction

    This is a recipe that I wrote down from some unknown source and it’s been in my ‘to try’ file forever. I’m glad I finally tried it. These are so delicious and easy! Everything just goes into one pot and cooks! You will think that it isn’t going to come together, but persevere and it will! You may need to cook and stir for more like 9 minutes, but watch that you don’t burn the sugar or the nuts. I tried adding a tablespoon of hot sauce to one batch with the vanilla and that was good, too!

    List of Ingredients

    1/4 c. butter
    2 1/2 c. whole unblanched almonds
    1 c. sugar
    1 t. vanilla
    1 t. salt + coarse salt for sprinkling

    Recipe

    In a very heavy saucepan (about 4-5 quart), melt butter over medium-high heat [#7 on my stove]. Add the sugar and stir for a few seconds. Add the almonds. Cook and stir constantly 7-8 minutes, or until the syrup is golden brown. Removed from heat. Stir in vanilla. Immediately drop by clusters on a greased baking sheet [I used Release foil – the best]. Cool. Store airtight.
