    My new favorite brittle recipe. I used this for Christmas 2008. This is the best brittle that I've made. It has the perfect texture - not too hard, with a little crumbly crunchiness and a deep, caramelized flavor. For a change, I like to sprinkle 6 oz. of chopped chocolate (milk or dark) on top while it's still hot and let it melt, then spread. I added a teaspoon of salt with the sugar and syrup and we also liked the punch of some sea salt sprinkled on the melted chocolate while its still all melty.

    List of Ingredients




    1 C. sugar
    1/2 c. light corn syrup
    1 c. raw peanuts
    1 t. butter
    1 t. vanilla
    1 t. baking soda

    Recipe



    Spray an 8x10' pan with cooking spray.

    In a large, microwave-safe bowl [note to self: the big bowls that go with everyday dishes work great] mix the sugar and corn syrup. Microwave 4 minutes on high. Stir in peanuts and microwave 5 more minutes. Stir in butter and vanilla until butter melts. Microwave 2 minutes. Stir in baking soda and quickly pour into pan.

    Cool and break into pieces. Store airtight.
