Burger Upside Down Corn Bread

Recipe Introduction
This is just a dowdy little cornbread topped beef casserole. It's really good, though and leftovers are wonderful.
List of Ingredients
- 2 T. butter
- 1 c. minced onion
- 1 1/2 lb. ground chuck
- 1 t. chili powder
- 1 t. salt
- 1/8 t. pepper
- 1/4 c. sliced ripe olives
- 1 - 8 oz. can tomato puree
- 1 T. flour
- 1 regular size corn muffin mix (the little box)
- 1 T. minced parsley
Instructions
- In a large skillet, melt butter and saute onion, about 5 minutes, until golden brown. Add beef and cook, stirring frequently, over medium heat until browned. Drain well.
- Add chili powder, salt, pepper, olives and tomatoes. Simmer 5 more minutes.
- Combine flour and 1 T. water. Stir into meat mixture. Cook, stirring constantly, 3 minutes or until slightly thickened. Spread evenly in a 9x9 pan.
- Prepare corn muffin mix according to directions, turn batter into hot meat mixture, spreading evenly over the top. Sprinkle with parsley.
- Bake at 400 degrees for 20 minutes or until cornbread is golden brown.
