    Burger Upside Down Corn Bread

    This is just a dowdy little cornbread topped beef casserole. It's really good, though and leftovers are wonderful.


    List of Ingredients


    • 2 T. butter
    • 1 c. minced onion
    • 1 1/2 lb. ground chuck
    • 1 t. chili powder
    • 1 t. salt
    • 1/8 t. pepper
    • 1/4 c. sliced ripe olives
    • 1 - 8 oz. can tomato puree
    • 1 T. flour
    • 1 regular size corn muffin mix (the little box)
    • 1 T. minced parsley


    Instructions


    1. In a large skillet, melt butter and saute onion, about 5 minutes, until golden brown. Add beef and cook, stirring frequently, over medium heat until browned. Drain well.
    2. Add chili powder, salt, pepper, olives and tomatoes. Simmer 5 more minutes.
    3. Combine flour and 1 T. water. Stir into meat mixture. Cook, stirring constantly, 3 minutes or until slightly thickened. Spread evenly in a 9x9 pan.
    4. Prepare corn muffin mix according to directions, turn batter into hot meat mixture, spreading evenly over the top. Sprinkle with parsley.
    5. Bake at 400 degrees for 20 minutes or until cornbread is golden brown.
