Chicken and Green Bean Casserole

Recipe Introduction
This recipe book was put together by the parishoners of Temple Baptist Church in Memphis, TN. This was the church that was attended by my great aunt, Mildred Easterwood Vann.
This recipe is very much like the famous Green Bean casserole, but it becomes a main dish with the addition of chicken. Very good.
I usually add shredded Cheddar cheese, a little hot sauce and canned fried onions and omit the mushrooms and pimento. I also sauté the chopped onions in a little olive oil for extra flavor.
List of Ingredients
- 2 c. diced, cooked chicken
- 1 can french style green beans
- 1 pkg. long grain and wild rice mix, prepared using broth from chicken
- 1 can cream of celery soup
- 1/2 c. mayo
- salt and pepper to taste
- 1 T. pimento, chopped
- 1/2 c. water chestnuts, chopped
- 1/2 c. sliced mushrooms
- 1 small onion, chopped
Instructions
- Mix all ingredients together, top with canned onions and bake at 350 degrees for 25 minutes or until heated through.
