    Recipe Introduction


    This is just too easy and too good to pass up. I just threw it together in a minute one night and we LOVED it. I really wouldn't hesitate to serve as a casual company dinner. It reheats really well in the microwave, too.


    List of Ingredients


    • 1 cooked deli chicken, skinned, boned and shredded
    • 2 large cans enchilada sauce
    • 1 small jar salsa
    • 1 pkg. Mexican style shredded cheese
    • corn tortillas


    Instructions


    1. Preheat the oven to 375 degrees.
    2. Mix the sauce with the salsa. Add enough to the chicken to moisten. Spread a little of the sauce in the bottom of a baking pan.
    3. On each tortilla, sprinkle a little of the cheese and then add some chicken. Roll up and place in the baking dish.
    4. When full, pour the enchilada sauce/salsa mixture over the tortilla rolls, covering. Sprinkle with as much cheese as you like. Cover with foil and bake until bubbly (about 20 minutes). Remove foil and bake until the cheese is done.


    Final Comments


    Serve with canned black beans fixed up with a little salsa and taco seasoning, a salad and more salsa and sour cream on the side.
