    Recipe Introduction

    This is a work in progress. Aunt San's was the first pimento cheese that I ever ate. Odd that I eat it at all, considering I hate peppers. But I remember hers as being so creamy and cheesy. The fact that it has pimento stuffed olives rather than just pimentos might give a hint as to why I liked it - I've always loved olive and cream cheese spread. Unfortunately, I never got the recipe from her. My cousin, Jeanette Magsig, had the ingredients, but not the amounts, so I'll be working on those. 12/2008 UPDATE: Well, I made it and I understand why I liked it as a kid. I really don't like the flavor of bell peppers (even though NOW I do like pepper jelly and pimento cheese) and this has a much stronger olive flavor than pimento and I've always loved olives. Honestly, I found it a little bland, though I do like the olive flavor and the creaminess. I confess that I'll probably ploof a dollop of Durkee's in it before I serve it.

    List of Ingredients

    4 oz. shredded sharp cheddar cheese
    4 T. chopped dill pickle
    6 T. chopped pimento stuffed olives
    3/4 c. mayo
    Freshly ground black pepper

    Recipe

    Mix all ingredients. Refrigerate for a couple of hours, at least.

    Makes one cup.
