This was easy, quick, and tasted just fine. I made a really good cauliflower cheese with this sauce. I just roasted the cauliflower until it was crisp tender, put it in a casserole dish and topped it with this sauce and baked it until the sauce was browned and bubbly. I’m sure that this would be improved by adding a little shredded Cheddar, but I didn’t have any. This would be a good sauce for broccoli or a quick Hot Brown.
1 cup diced Velveeta cheese (or American cheese slices)
3 T. canned evaporated milk (more or less to taste, or use regular milk)
1 t. mustard powder
1 dash hot sauce
1 dash onion powder

Microwave all of the ingredients in a bowl on high, stirring well every 30 seconds until the cheese and melted and the sauce is smooth (2-3 minutes). You may need to add a bit more milk to get the proper consistency.
