Baked Chocolate Cheesecake

Recipe Introduction
This is a recipe that I made long ago. I just unearthed it while doing some sorting and remember that it was very good. No idea why it is called ‘Baked’ – isn’t most cheesecake baked? I have no idea where the recipe came from either. I wrote it down before I realized how important it was to give credit. Nowadays, I would use a good dark chocolate rather than chips. I would also use a Bain Marie. This might be nice with a glossy ganache or a whipped cream topping.
List of Ingredients
CRUST:
1/3 c. butter, melted
1 1/4 c. chocolate cooky crumbs
1/4 c. sugar
FILLING:
3 – 8 oz. packages cream cheese, room temperature
1 – 14 oz. can sweetened condensed milk
12 oz. semisweet chocolate chips, melted and slightly cooled
4 eggs
2 t. vanilla extract
Recipe
CRUST:
Preheat oven to 300 degrees. Combine butter, cooky crumbs and sugar and press into bottom and up sides of a buttered/greased 9-inch springform pan. Bake for 10 minutes and cool.
FILLING:
Beat cream cheese until smooth and fluffy. Add condensed milk and beat until smooth. Add remaining ingredients and mix well. Pour into crust. Bake for 1 hours and 5 minutes, or until done. Cake should be fairly well set, but still have a slight jiggle. Cool completely on a rack, then refrigerate for at least 6 hours.
