    White Chocolate Cheesecake

    List of Ingredients


    • 1 1/4 c. plain vanilla pound cake crumbs
    • 3 - 8 oz. pkg. cream cheese - softened
    • 1 c. sugar
    • 2 1/2 t. vanilla
    • 1 T. apricot brandy
    • 12 oz. white baking chocolate - melted
    • 2 c. sour cream
    • For garnish: shaved white chocolate and apricot slices


    Instructions


    1. Preheat oven to 350 degrees.

    2. Sprinkle crumbs evenly over bottom of a 9" spingform pan and press down lightly.

    3. With an electric mixer, beat cream cheese, sugar, vanilla and apricot brandy until very smooth; at least 5 minutes. Add melted white chocolate and beat 5 minutes longer. Add sour cream and mix until combined. Pour into crumb-lined pan and bake for 30 minutes.

    4. Remove from oven, cool and refrigerate overnight before serving.
