    Congealed Cherry Salad

    Recipe Introduction

    This is a good, creamy congealed salad. I happened to have some candied pecans around so I used them for the topping - very good. Next time, I might use cherry gelatin for the bottom layer.

    List of Ingredients

    1 (3 ounce) box raspberry gelatin
    2 c. boiling water, divided
    1 (22 ounce) can Lucky Leaf Cherry Pile Filling
    1 c. miniature marshmallows
    1 (8 ounce) carton whipping cream, whipped
    1 (3 ounce) box lemon gelatin
    1 (3 ounce) package cream cheese, softened
    1/3 cup mayonnaise
    1 (8 1/4 ounce) can crushed pineapple, undrained
    1/4 cup chopped pecans

    Recipe

    Dissolve raspberry gelatin in 1 cup boiling water; stir in pie filling. Pour into 11x7 inch casserole; chill until partially set.

    Dissolve lemon gelatin in 1 cup boiling water. Combine cream cheese and mayonnaise. Stir in lemon gelatin, pineapple and marshmallows. Fold in whipped cream. Spread lemon mixture over cherry layer. Sprinkle with pecans. Chill until firm.

    Serves 12.
