Alfajores w/ Dulce de Leche filling

Recipe Introduction
Alfajores are a tender orange scented sandwich cooky filled with delicious dulce de leche. Not at all difficult to make and very impressive at the same time. We really loved this cooky. We thought that it would be good to increase the orange zest and dip unfilled cooky wafers in really good chocolate.
List of Ingredients
1 1/4 c. (5.3 oz.) flour
1 1/4 c. cornstarch
1/2 t. baking powder
1/2 t. salt
1/2 t. ground cinnamon
12 T. sweet butter, softened
2/3 c. sugar
4 egg yolks
1 t. packed minced orange zest
1 (13.4 oz.) can dulce de leche
Cocoa powder
Recipe
Heat oven to 350 degrees. Line cooky sheets with parchment paper.
Whisk together the flour, cornstarch, baking powder, salt and cinnamon. Set aside.
In the bowl of a stand mixer, cream the butter and sugar until light and fluffy. Add the yolks and zest and mix until combined. Add half of the flour mixture and mix until just combined. Add the rest of the flour mixture and mix until combined. Divide the dough into two discs and wrap in plastic wrap. Refrigerate for a half an hour. You can chill up to overnight if you want, but if you do you need to bring the dough to almost room temperature before rolling out.
Roll the dough out on a floured surface to a 1/8 – 1/4-inch thickness. Cut with a 2-inch cooky cutter [I used a square cutter with a wavy edge] and place on cooky sheets about 1-inch apart.
Bake about 14-16 minutes, until the edges are lightly golden. Cool on sheet for one minute then transfer cookies to cooling rack to cool completely.
Top half of the cookies with 2 t. dulce de leche each and cover with the other half of the cookies. Dust tops with cocoa powder.
Makes about 25 cookies.
