    I was looking for a really easy cooky recipe for times when I just have no time but need “homemade” treats. I saw someone make them on Instagram, found the recipe at delish.com and gave them a try. They are surprisingly good and incredibly easy. The best way to form them into balls is using a small cooky scoop (I used one that was just slightly larger than 1 tablespoon). If the dough is too soft to scoop into balls after mixing, refrigerate for 30 minutes. Apparently, you can use different cake mix flavors – lemon, strawberry, pineapple, etc. There were some cute colorful cookies that folks had obviously used food coloring in.

    1 box devil's food cake mix
    1 (8-oz.) container Cool Whip
    1 large egg
    1/2 c., or more powdered sugar

    Recipe



    Heat the oven to 350F, Put the racks in the upper and lower thirds of the oven. Place parchment paper in two baking sheets.

    Using an electric hand mixer in a large bowl mix the cake mix, Cool Whip, and egg until thoroughly blended and has a taffy-like consistency. It should take about one minute.

    Put the powdered sugar in a shallow bowl. Scoop the dough into the powdered sugar and roll around to coat completely.

    Place the balls 2-inches apart on the baking sheets and bake for 13-15 minutes. Cookies should be slightly soft in the center, but fairly firm on the edges. Cool slightly on sheet and then transfer to cooling racks.

    Makes about 20 cookies.
