Mixed Nut Turtles

My version of a Christmas with Southern Living 1998 recipe
Recipe Introduction
These are wonderful, shortbread-like cookies. I added the caramel, because Turtles have caramel. It worked very well.
List of Ingredients
¾ c. butter, softened
½ c. sugar
1 egg yolk
1 t. vanilla
1 ½ c. AP flour
1 (9.75 oz.) can salted mixed nuts (with almonds, macadamia nuts and cashews)
Caramels, cut in half (1 half per cooky)
1 ½ c. semisweet chocolate chips
2 t. shortening
Recipe
Preheat oven to 350 degrees. Beat butter until creamy; gradually add sugar, beating well. Add yolk and vanilla, beating well. Add flour, beating just until blended.
Drop dough by level tablespoonsful 2" apart onto ungreased cookie sheets lined w/ parchment paper. Flatten each ball of dough to a 2" circle. Cut large macadamia nuts in half. Press nuts firmly into outside top edges of cookies. Place caramel half in center of each cooky.
Bake for 10 - 12 minutes or until edges of cookies are lightly browned. Cool on cookie sheets one minute. Carefully remove cookies to wire racks to cool completely.
Melt chocolate and shortening slowly in microwave or on top of double boiler. Stir until smooth. Spoon one heaping teaspoon onto center of each cooky. Spread and smooth chocolate between nuts. Let set until chocolate hardens.
Makes 26 cookies.
