A thin, crisp spice cooky. This is one of my favorite cookbooks.
List of Ingredients
3 ¾ c. sifted flour
1 ¼ t. baking powder
2 ½ t. ground cinnamon
1 ¼ t. ground cloves
1 ½ c. (3 sticks) sweet butter, at room temperature
2 c. brown sugar
1 large egg
Recipe
Sift the flour, baking powder and spices together onto a piece of waxed paper.
Ina large bowl, cream the butter until it is light and fluffy. Gradually mix in the brown sugar, beating until it is fluffy. Then add the egg and mix well.
Gradually add the dry ingredients, and mix until combined. The dough will be fairly soft. Cover the bowl and chill the dough in the refrigerator until it is firm enough to roll out, about 1 hour.
Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
Divide the dough in thirds. Using one third, roll it out on a lightly floured surface, so it is about 1/8” thick. Cut it out with a cooky cutter, and place ½” apart on cooky sheet. Bake in the center of the oven until they are golden, 10 – 12 minutes. Repeat with remaining dough. Cool on wire racks.
Makes about 12 dozen cookies.
