Three-Ginger Cookies

Recipe Introduction
These are seriously gingery cookies. Michael loved them, I found them slightly too gingery. If you love ginger, you will adore these cookies.
List of Ingredients
1 c. sugar
¼ c. butter, melted
1 T. grated gingerroot
2 T. molasses
2 egg whites
1 ½ c. flour
1 t. baking soda
½ t. ground ginger
2 T. chopped crystallized ginger
Demerara sugar
Recipe
Mix 1 c. sugar; the butter, gingerroot, molasses and egg whites in a medium bowl. Mix the flour, baking soda and ground ginger in a small bowl. Add the dry mix to the wet mix and blend well. Cover and refrigerate for at least 2 hours.
Heat oven to 350 degrees. Line cooky sheets with parchment paper. Shape dough into 1 ½ inch balls. Roll balls in the demerara sugar. Place on cooky sheet. Bake 10 – 12 minutes, or until golden brown – cookies will be soft. Cool on cooky sheet for 5 minutes and transfer to rack. Cool completely.
Makes about 1 ½ dozen cookies.
