We made this for Mike to take into work for a breakfast gathering. It was very popular. Very easy, too. I put it together the night before. I did the layers and put the egg mixture in a separate container and poured it over just before starting the slow cooker. When done, it will look like there were not enough eggs. It is fine.
20-ounce bag frozen, shredded hash browns
8 slices thick-cut bacon, cooked and coarsely chopped
8 ounces shredded cheddar cheese
6 green onions, sliced thin
12 eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper

Lightly spray the cooker with the cooking spray. Place half the hash browns in the bottom of the cooker. Top with half the bacon, half the cheese and half the green onions. Repeat all layers.
Whisk the eggs with the milk and salt and pepper. Place the top on the cooker and cook 2-3 hours on HIGH, or 4-5 hours on LOW. The eggs should be just set. Serve immediately.
