    Barbecue Sausage Bites

    Source of Recipe

Rebekah Randolph in Quick Cooking Magazine, Jan./Feb. 2004

    Recipe Introduction

This is another recipe from my Grandma Jean’s seemingly never-ending supply of old magazines. In reading this recipe, I somehow missed that this was an appetizer and made it for dinner. With all of the BBQ sauce, it was a little intense when served as a dinner portion! But the flavor is good. We’ve all had similar things before – meatballs with chili sauce and grape jelly, mini sausages with apricot jam and BBQ sauce. This one is a little different because of the type of sausages used and the pineapple and orange marmalade.

    List of Ingredients

1 package (16 ounces) miniature smoked sausages
3/4 pound fully cooked bratwurst links, cut into 1/2-inch slices
3/4 pound smoked kielbasa or Polish sausage, cut into 1/2-inch slices
1 bottle (18 ounces) barbecue sauce
    2/3 cup orange marmalade
    1/2 teaspoon ground mustard
    1/8 teaspoon ground allspice
1 can (20 ounces) pineapple chunks, drained

    Recipe

Place the sausages in a 3-quart slow cooker. Mix the BBQ sauce, marmalade, mustard and allspice in a small bowl and pour over the sausages, stirring.

Cook on high for 2 1/2 to 3 hours. About 1/2 hour before done stir in the pineapple.

    Serves 12-14 as an appetizer
