I used a 3lb pork loin, so I tripled the amount of ingredients so there would be enough sauce to keep it moist in the crockpot.

The crockpot worked VERY well. I had it on low for 9.5 hours (don't forget I used a 3 lb loin) and when I came home and checked the temp, it was at 156 degrees... perfect!
