    Easy Stuffed Chicken Rolls

    Recipe Introduction


    This is a really good and easy Chicken Cordon Bleu type recipe that I made some adjustments to. Note that it only takes about 4-5 hours in the crock-pot, as opposed to some that take much longer.


    List of Ingredients


    • 6 lg. boneless, skinless chicken breasts, flattened to 1/8" thickness
    • 6 slices ham
    • 6 slices swiss cheese
    • 1/4 c. flour
    • 1/4 c. Parmesan cheese, grated
    • 1/2 t. sage
    • 1/4 t. paprika
    • 1/4 t. pepper
    • 1/4 c. vegetable oil
    • 1 can Cream of Chicken soup - undiluted
    • 1/2 c. chicken broth
    • 2 T. fresh parsley, minced
    • a few dashes of hot sauce
    • 2 T. Dijon mustard


    Instructions


    1. Place one slice of ham and cheese on each chicken breast. Roll up and tuck in ends; secure with toothpicks. Combine flour, cheese, sage, paprika and pepper; coat chicken on all sides with the mixture. Cover and refrigerate for one hour.
    2. In a large skillet, brown chicken on all sides in oil over medium heat. Transfer to a 5 qt. slow cooker. Combine soup, broth, hot sauce, parsley and mustard; pour over chicken. Cover and cook on low setting for 4-5 hours. Remove toothpicks before serving.


    Final Comments


    Good with rice and brocolli.
