Easy Stuffed Chicken Rolls
Source of Recipe
My version of a recipe I got from Jen on the internet
Recipe Introduction
This is a really good and easy Chicken Cordon Bleu type recipe that I made some adjustments to. Note that it only takes about 4-5 hours in the crock-pot, as opposed to some that take much longer.
List of Ingredients
- 6 lg. boneless, skinless chicken breasts, flattened to 1/8" thickness
- 6 slices ham
- 6 slices swiss cheese
- 1/4 c. flour
- 1/4 c. Parmesan cheese, grated
- 1/2 t. sage
- 1/4 t. paprika
- 1/4 t. pepper
- 1/4 c. vegetable oil
- 1 can Cream of Chicken soup - undiluted
- 1/2 c. chicken broth
- 2 T. fresh parsley, minced
- a few dashes of hot sauce
- 2 T. Dijon mustard
Instructions
- Place one slice of ham and cheese on each chicken breast. Roll up and tuck in ends; secure with toothpicks. Combine flour, cheese, sage, paprika and pepper; coat chicken on all sides with the mixture. Cover and refrigerate for one hour.
- In a large skillet, brown chicken on all sides in oil over medium heat. Transfer to a 5 qt. slow cooker. Combine soup, broth, hot sauce, parsley and mustard; pour over chicken. Cover and cook on low setting for 4-5 hours. Remove toothpicks before serving.
Final Comments
Good with rice and brocolli.
