Recipe Introduction
I had a little rump roast in the freezer that I wanted to use and decided to just throw together a slow cooker pot roast recipe. I always knew that some people used Lipton’s Onion Soup mix to make pot roast, though I’d never used it for anything other than dip (has anyone in the history of the world actually made SOUP with Lipton’s?). So I started there and added this and that. It turned out really good, though it could have used a bit of red wine. I didn’t have anything but white in the house.
List of Ingredients
3 large potatoes, peeled and quartered
1 medium onion, sliced
3 lb. rump roast
1 envelope of Lipton’s onion soup mix
1 T. Bisto
2 garlic cloves, minced
1 t. Penzey’s Mural of Flavor
1/2 t. Worcestershire pepper
1 c. hot water
2 T. tomato paste
Recipe
Put the potatoes and the onions in the bottom of the slow cooker. Place the roast on top. Mix the rest of the ingredients and pour over the roast. Cook on ‘low’ for 7-9 hours.
Remove the meat and potatoes from the slow cooker. While the meat is resting, turn the cooker to ‘high’ and let sauce simmer. You can add a slurry of flour and water or just a little more Bisto to thicken, if you like.
