    Roasted Chicken Thighs and Legs (CSO)

    These are delicious as is, but you can embellish them as you like – other seasoning, herbs, etc. These also make great oven-BBQ’d chicken. Just pull them a little below 165F, brush with sauce and broil until charred and bubbly.

    List of Ingredients




    Bone in, skin on chicken thighs and legs
    Kosher salt
    Freshly ground black pepper

    Recipe



    At some point before cooking – at least 2 hours up to 24, coat the chicken pieces with a good pinch of Kosher salt per piece and refrigerate uncovered. When ready to cook, rinse off the salt and dry very well. Sprinkle with pepper and cook in the CSO on Bake/Steam at 400F until the chicken reaches 165F, about 20-25 minutes.
