    Cake Mix Neapolitan Cake Bars

    Source of Recipe

Betty Crocker “Super Moist Cake Mix Magic” Booklet

    Recipe Introduction

This makes really pretty and surprisingly good firm cake bars. I added 3 t. coconut extract to the white layer and that emphasized the similarity between these and those Neapolitan candy bars.

    List of Ingredients

1 box Betty Crocker Super Moist devil’s food cake mix
1 box Betty Crocker Super Moist white cake mix
1 box Betty Crocker Super Moist strawberry cake mix
    1 1/2 c. butter (3 sticks), room temperature
    3 eggs, room temperature

    Recipe

Heat oven to 350 degrees. In a large bowl, mix the devil’s food cake mix, 1 stick of butter and one egg until well combined. This will be more like a dough than a batter. Press into an ungreased 13x9-inch pan. I found it easier to place chunks of dough all around the pan, press with my fingers and then roll evenly with a small rolling pin.

Repeat with the white cake mix. Then the strawberry. Bake for 40-50 minutes – until it passes the toothpick test. Cool completely in the pan on a cooling rack. Cut into 6 rows by 4 rows. [I thought that they looked better with the outer edge completely cut off – so I ended up with 3 rows and cut into 1 cm. thick slices.]
