    These are great! You can make them ahead of time. Fill with whipped cream, fruit, etc. You will never run out of ideas for these. Not overly sweet either, but a nice chocolate flavor and easy to do!!

    Use a large nonstick skillet with sloping sides. The best way to oil the pan is to wipe it with a paper towel that has been dipped in the oil.


    List of Ingredients


    • 1 1/2 c. flour
    • 6 T. confectioner's sugar
    • 2 T. vegetable oil
    • 2 large eggs
    • 1/2 c. cocoa
    • pinch of salt
    • 2 c. milk
    • 1/2 t. vanilla
    • oil for cooking, as needed


    Instructions


    1. Combine dry ingredients. Mix well.
    2. Combine butter, milk, eggs and vanilla; mix well. Add to dry mix, whisking to dissolve any lumps. Refrigerate for 1 hour.
    3. Oil a skillet and heat on medium. When hot, add 1/4 c. batter to pan and swirl to create crepe. Cook on one side 40 seconds, turn over and cook on the other side 15 seconds. Stack between pieces of wax paper. Can store overnight.

    Makes 16 crepes.
