    Recipe Introduction


    Everyone is always blown away by this dessert. It is so good and rich! A chocoholics dream!


    List of Ingredients


    • TRUFFLE LOAF:
    • 2 c. heavy cream
    • 3 egg yolks - slightly beaten
    • 2 - 8 oz. pkg. semi sweet chocolate
    • 1/2 c. light corn syrup
    • 1/2 c. butter
    • 1/4 c. confectioner's sugar
    • 1 t. vanilla
    • RASPBERRY SAUCE:
    • 1 - 10 oz pkg. frozen raspberries - thawed
    • 2/3 c. light corn syrup
    • 2 T. chambourd
    • GARNISH:
    • Whipped cream
    • mint leaves
    • whole raspberries


    Instructions


    1. LOAF: Line a loaf pan with plastic wrap (spray pan with cooking spray first to help it stick).
    2. Mix 1/2 c. cream with yolks.
    3. Mix chocolate, butter and syrup. Melt 2 minutes in the microwave, stirring twice. Stir in egg mix. Microwave 3 minutes, stirring twice. Cool to room temperature.
    4. Beat remaining cream, sugar and vanilla to soft peaks. Fold into chocolate mixture until no streaks appear. Pour into prepared pan. Refrigerate overnight.
    5. RASPBERRY SAUCE: Puree raspberries and strain. Add corn syrup and Chambourd.
    6. PRESENTATION: Cut loaf into slices. Pour sauce on a plate. Put slice on puddle. Garnish.
