Coconut ‘Nana Pudding

Recipe Introduction
This is a riff on banana pudding that was inspired by a dessert we had at Les Halles restaurant in Washington, DC. No exact ingredients – mostly this is a list of directions. It was a delicious dessert, though! I just used two small packages of coconut pudding mix, but I think that this would be even better using the filling from my Coconut Cream Pie recipe.
List of Ingredients
CRUST:
Pepperidge Farm butter cookies
Butter
Sugar
PUDDING:
Bananas
Butter
Brown sugar
2 packages coconut pudding, prepared
Toasted coconut
Good caramel sauce
Recipe
CRUST:
Make a crust with the cookies, butter and sugar and press into the bottom of a deep dish pie pan. Refrigerate.
PUDDING:
Sauté banana in butter and brown sugar as for Bananas Foster. Line the crust with some of the bananas (save some for the top). Top this with the pudding, additional bananas and toasted coconut. Refrigerate. Drizzle with caramel sauce as you serve each serving.
