    Easy Lemon Mousse

    Source of Recipe

    Internet

    Recipe Introduction

Technically, of course, this isn’t mousse. No eggs, no cooking. But it’s creamy and tangy and really good. And, like the title says – it’s EASY!

    List of Ingredients

1 cup whipping cream (heavy cream (not pre-whipped))
4 oz cream cheese (at room temperature (1/2 block))
    1 tsp vanilla
zest and juice from one fresh lemon
    1/4 cup sugar
fresh berries: blueberries (strawberries or raspberries) + lemon zest twists for garnish

    Recipe

Place the bowl and the whipping attachment of your mixer in the refrigerator for a few minutes. Then, whip the cream to the stiff peaks stage. Place in a clean bowl and set aside.
Place the cream cheese in the bowl and whip until smooth. Add the vanilla, sugar, lemon zest, and juice and mix well. Gently fold the whipped cream into the cream cheese mixture until completely combined.

Place in either individual serving dishes or a large single one and refrigerate until ready to serve. Top with fresh berries and some lemon zest garnish. Cover to refrigerate any leftovers.

    Serves 6-8
