    Karen has made these for coffee hour at church and also for the reception after Momma's memorial service. Everyone loved them and Karen very kindly shared the recipe.

    List of Ingredients




    BARS:
    1/2 cup butter, softened
    2 cups sugar
    3 large eggs, room temperature
    1-1/2 cups mashed ripe bananas (about 3 medium)
    1 teaspoon vanilla extract
    2 cups all-purpose flour
    1 teaspoon baking soda
    Dash salt

    FROSTING:
    1 package (8 ounces) cream cheese, softened
    1/2 cup butter, softened
    4 cups confectioners' sugar
    2 teaspoons vanilla extract

    BARS:
    Heat the oven to 350F and line a 15x10x1-inch baking pan with baking spray and parchment paper. Cream the butter and sugar until light and fluffy – about 5-7 minutes. Add the eggs, bananas, and the vanilla and beat well. Mix the flour, baking soda, and the salt and mix into the butter mixture just until completely blended. Do not over mix.

    Spread in the prepared baking pan and bake for 20-25 minutes. It should pass the toothpick test. Cool completely in the pan on a wire rack.

    FROSTING:
    Beat the cream cheese and butter until combined and fluffy. Add the confectioner’s sugar and vanilla and beat until smooth. Ice the cooled bars and cut into serving pieces.

    Makes about 3 dozen bars (depending, of course, on how large you cut them).
