    Paula Deen’s Gooey Butter Bars

    Paula calls this “cake”, but they are really bars. Intensely buttery and sweet, these should be cut into small servings. The butter and sugar caramelize, and you get almost a Chess pie-like flavor. Jessica makes these often as a “thank you” for something sweet someone does for her, and they are always appreciated. Jessica adds a pinch of kosher salt to the crust ingredients.

    1 (18 1/4 oz) package yellow cake mix
    1 egg
    16 tablespoons butter - melted, divided
    1 (8 oz) package softened cream cheese
    2 eggs
    1 teaspoon vanilla
    1 (16 oz) box powdered sugar
    Kosher salt – see note above

    Recipe



    Heat the oven to 350F. Spray a 13x9-inch baking pan with cooking spray, line with parchment paper and spray again.

    Put the cake mix, single egg, and 8 tablespoons of the butter into a mixing bowl and mix well. Press this mixture into the bottom of the baking pan.

    With an electric mixer, beat the cream cheese until smooth. Add the remaining eggs, vanilla, and remaining melted butter and mix well. When completely blended, add the powdered sugar and mix completely. Spread over the mixture in the baking pan. Bake for 40-50 minutes, making sure not to overcook – the center of it should be gooey.

    Cut into small bars.

    Store at room temperature for 2 days. Refrigerate for up to a week or freeze for up to 9 months.
