    Ree's Pots de Creme

    Recipe Introduction

These were delicious! Also incredibly easy! You just puree everything in a blender, pour into your serving dishes and refrigerate for at least 3-4 hours. I had a huge bag of chocolate chips that someone had given me that needed using up, so I just used them, but next time I'd like to try using some really good chocolate. Make sure that the eggs are room temperature and that the liquid is hot, hot, HOT! This is supposed to make 6 servings - Ree used martini glasses, which I don't have - I served mine in red wine glasses so I only got 5 servings. I think some chocolate shavings would be nice on top of these.

    List of Ingredients

12 oz. chocolate, chips or chopped
    4 eggs, room temperature
    2 t. vanilla, or liqueur
    a good pinch of salt
8 oz. hot coffee, skim milk or water
    sweetened whipped cream

    Recipe

Put the chocolate, eggs, vanilla and salt in the blender in that order. Have the liquid good and hot. Put on the lid and mix just until it starts to blend. Remove the disk from the lid and begin to pour the hot liquid into the mixture, continuing to blend. Pour in a slow, steady stream. Once you've added all the liquid continue to blend for a few seconds until the mixture is completely blended and smooth. Pour into what you want to serve them in [wine glasses, mini coffee cups, pots de creme cups, etc.], leaving room for whipped cream. Refrigerate for at least 3-4 hours. Top with fresh sweetened whipped cream.

    Serves 5-6.
