    Charleston Cheese Dip

    Recipe Introduction

    This is just hot, gooey, rich stand-around-and-scoop-it-up goodness. This is truly one of the best hot dips I’ve ever had! Easy to make, too. I put it all together early in the day and just heated it up at the last minute. I zapped the bacon in the microwave before putting it on top of the hot dip and I subbed a few shakes of hot sauce for cayenne.

    List of Ingredients

    1/2 cup mayonnaise
    One 8-ounce package cream cheese, softened
    1 cup grated sharp Cheddar cheese
    1/2 cup grated Monterey Jack cheese
    2 green onions, finely chopped
    1 dash cayenne pepper
    8 butter crackers, crushed, such as Ritz
    8 slices bacon, cooked and crumbled
    Corn chips, crackers or bagel chips, for serving [Ritz is BEST!!!]

    Recipe

    Heat the oven to 350 degrees. Spray a baking dish (about the size of a pie pan) with baking spray.

    Cream the softened cream cheese in a bowl [I found that a hand mixer worked best for this recipe]. Mix in the mayo, Cheddar, Monterey Jack, green onions and cayenne until thoroughly combined. Spread in the baking dish and top with the cracker crumbs. Bake until hot and bubbly – about 15 minutes.

    Reheat bacon crumbles in the microwave and sprinkle on top of dip to serve.
