    Guacamole

    My version of a recipe from Gourmet Magazine, May 2001

    Recipe Introduction

    I made this very popular Guacamole for Jessica’s 22nd birthday party. Everyone loved it. It was very fresh tasting. You could certainly add some hotter chilies, if you like the heat. Try not to make this more than 1 hour ahead of time, because the avocado will turn brown.

    List of Ingredients

    2 ripe California avocados (1 lb total), quartered, pitted, and peeled
    1/2 cup chopped fresh cilantro
    1/2 cup minced white onion
    1 can (4 oz.) mild green chilies
    ½ c. chopped tomatoes
    4 teaspoons fresh lime juice, or to taste
    1 1/2 teaspoons kosher salt, or to taste

    Recipe

    Mash avocados in a bowl with a potato masher. Add lime juice and mix in. Add remaining ingredients and mix well. You can puree in a blender if you want a smoother consistency.

    Makes about 2 cups.
