    Recipe Introduction


    Inspired by Mifi at eGullet and her amazing pictures of her baked eggs, I decided to try them one Sunday morning. They were delicious and so much easier than I thought they would be! I don’t know why I haven’t done these before, but I’ll be doing them often from now on! You can mix them up how you like. The ingredient list is just a suggestion. This time I made them with some leftover Serrano ham and a 3 year cheddar. A toaster oven works great here!

    List of Ingredients




    PER SERVING:
    1 egg
    2 t. butter
    1 T. cream
    1/2 T. finely chopped ham
    1/2 T. shredded cheese
    A sprinkling of fresh herbs: chives, parsley, thyme, etc.
    Freshly ground black pepper

    Recipe



    Preheat the oven to 350 degrees.

    Place the butter in a ramekin and heat for about 4 minutes in the oven. Add the egg and the rest of the ingredients. Place the ramekin back in the oven for 6 – 9 minutes. You want the whites cooked and the yellows runny. It can take a few tries to get it right based on your oven. But even if it is a little over cooked, it will still be good. Remember that there will be carry-over cooking after the ramekin is removed from the oven, so you want it a little ‘shakey’.
