Recipe Introduction
This is the recipe that Momma always uses. She got it from her friend, Charlotte, in Florida. The texture is very similar to the Cook’s Illustrated recipe that I use – very custardy and soft. This one contains onion and has a LOT more bacon. Very, very good. Charlotte says that a good change is to substitute 6 oz. of salmon for the bacon and chopped leeks for the onion (I would sauté the leeks in a little butter).
List of Ingredients
1 pie shell, partially baked blind
4 eggs, beaten
1 c. shredded Swiss cheese
12 slices bacon, fried and crumbled
1/3 c. minced onion
2 c. heavy cream
3/4 t. salt
1/4 t. sugar
Recipe
Heat the oven to 425 degrees. Place the bacon, onion and cheese in the pie shell. Mix the rest of the ingredients into the eggs and pour into the pie shell. Bake at 425 for 15 minutes, then lower the heat to 300 and continue to bake for about 30 more minutes.
Makes 1 quiche.
