Pille served it for brunch and I served it with home made vegetable soup for a late dinner. I sliced the eggs into a few slices, the better to cover the bread and I added a little Dijon to the bread with the mayonnaise. Pille suggests Havarti - I had Swiss, so I used that, but I want to try the Havarti and Fontina, too.
List of Ingredients
4 slices of bread
4 tsp of mayonnaise
2 boiled eggs
4 slices of cheese
Recipe
Preheat the oven to 400 F. (You can also do this in a toaster oven on the broiler setting).
Smear the mayonnaise onto bread slices. Peel the eggs and cut into two halves lenghtwise. Place one egg half on each slice of bread, cut side down.
Balance a slice of cheese on top.
Put into a hot oven for 8-10 minutes, until the cheese is starting to melt and the egg and bread are warm. Garnish with a sprig of thyme from your windowsill and serve with some sliced tomatoes.
Serves 2.
