Mini Ham 'n' Cheese Frittatas

Recipe Introduction
These were so easy and very good. You could change out the ham for bacon or sausage and use a different cheese. They reheat very well and, because of their size, would make a great weekday breakfast on a bun or biscuit. A non-stick (or maybe silicone) cupcake pan would make removing and clean up much easier.
List of Ingredients
1/4 pound fully cooked ham, chopped fine
1 cup (4 ounces) shredded low fat cheddar cheese
8 eggs
3 tablespoons minced chives
2 tablespoons fat-free milk
1/4 teaspoon salt
1/4 teaspoon pepper
Recipe
Preheat oven to 375 degrees.
Spray 8 muffin cups with cooking spray. Divide the ham and cheese evenly among the muffin cups. Beat together the eggs, chives, milk, salt and pepper. Pour over the ham and cheese mixture.
Bake for 18 - 20 minutes, until just barely set (they will continue to cook as they sit). Carefully run a knive around the edges of the cups and remove from the pan.
